What&#8217;s the fusion element? I used extra fine spaghetti instead of traditional noodles. Real morish comfort food with a lovely combination of flavours.<\/p>\n<figure id=\"attachment_578\" aria-describedby=\"caption-attachment-578\" style=\"width: 300px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-578\" src=\"http:\/\/vegananimal.nl\/wp-content\/uploads\/2015\/09\/VgnMF-15-Day-23-Spicy-Peanut-Tofu-1-300x239.jpg\" alt=\"Spicy peanut, tofu, green beans and carrot\" width=\"300\" height=\"239\" \/><figcaption id=\"caption-attachment-578\" class=\"wp-caption-text\">Spicy peanut, tofu, green beans and carrot<\/figcaption><\/figure>\n<p><strong>Ingredients<\/strong><\/p>\n<p><em>Sauteed Tofu<\/em><br \/>\n400g firm tofu<br \/>\n1 tablespoon of dehydrated vegetable stock (or powered equivalent)<br \/>\n2 tablespoons of soya sauce<br \/>\n1 tablespoon coconut oil<\/p>\n<p><em>Peanut sauce<\/em><br \/>\n3 tablespoons peanut butter of choice<br \/>\n1 tablespoon soya sauce<br \/>\n2 tablespoons lemon juice<br \/>\n1 teaspoon sesame oil (optional)<br \/>\n1 tablespoon finely minced ginger<br \/>\n2 &#8211; 3 cloves garlic<br \/>\n1 &#8211; 2 fresh red chillies<br \/>\n1\/4 cup of boiling water<\/p>\n<p>250g green beans, finely sliced<br \/>\n3 large carrots, spiralized into noodle-like strips<\/p>\n<p>250g or rice vermicelli noodles (or thai rice noodles, or any kind of long pasta strips of your choice) &#8211; prepared to package instructions<\/p>\n<p>Fresh coriander for garnish<\/p>\n<p><em>Method<\/em><br \/>\n&#8211; Melt the coconut oil in a saucepan or wok over medium heat.<br \/>\n&#8211; Add the tofu and saut\u00e9e until starting to get crispy<br \/>\n&#8211; Add the dehydrated vegetable stock and stir fry for a few minutes until tofu is covered<br \/>\n&#8211; Add 2 tablespoons of soya sauce and stir fry for a couple of minutes until tofu is covered and starting to caramelise. Then set aside in a bowl.<br \/>\n&#8211; lightly steam greens beans for 6 to 7 minutes and carrots for 4 minutes<br \/>\n&#8211; Place a saucepan or wok on medium heat and add enough water to cover the bottom of the pan<br \/>\n&#8211; Just before the water starts boiling add the ginger, garlic and chilli.<br \/>\n&#8211; Simmer for 2 to 3 minutes ensuring there&#8217;s enough water to prevent from sticking<br \/>\n&#8211; To prepare the peanut sauce add all of the ingredients to a deep bowl and whisk together. Add more boiling water if necessary &#8211; the consistency should be thick enough to just drip off your finger without being too runny.<br \/>\n&#8211; Add the peanut sauce to the saucepan with the ginger, garlic and chilli mixture.<br \/>\n&#8211; Allow to simmer until mixture starts to bubble<br \/>\n&#8211; Add the green beans and mix, then add the carrots and mix and finally the saut\u00e9ed tofu.<br \/>\n&#8211; Simmer for 2 to 3 minutes and the add your noodles.<br \/>\n&#8211; Simmer for 2 to 3 minutes until noodles are well covered.<br \/>\n&#8211; Spinkle with fresh coriander and serve.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>VeganMofo 2015 &#8211; Day 23: Fusion Challenge.
