A classic deserves a classic. Here&#8217;s a good old Italian meal of penne with A spicy tomato sauce with smoked tofu and mock parmesan.<\/p>\n<figure id=\"attachment_583\" aria-describedby=\"caption-attachment-583\" style=\"width: 300px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-583\" src=\"http:\/\/vegananimal.nl\/wp-content\/uploads\/2015\/09\/VgnMF-15-Day-24-Soprano-Pasta-1-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" \/><figcaption id=\"caption-attachment-583\" class=\"wp-caption-text\">Spicy Tomato and Smoked Tofu Pasta for Tony Soprano<\/figcaption><\/figure>\n<p><strong>Spicy Tomato and Smoked Tofu Pasta for Tony Soprano<\/strong><\/p>\n<p><em>Ingredients<\/em><br \/>\n400g of plain or smoked tofu, saut\u00e9ed or grilled until lightly crispy (for a tasty method to saute\u00e9 tofu see below)<br \/>\n2 teaspoons of olive oil<br \/>\n5 \u2013 6 cloves of garlic, mince<br \/>\n2 (400g) tins of crushed tomatoes<br \/>\n\u00bd teaspoon dried thyme<br \/>\n\u00bd teaspoon dried oregano<br \/>\n1 teaspoon salt<br \/>\n\u00bd teaspoon of freshly ground black pepper<br \/>\n2 teaspoons of dried red chilli powder (optional \u2013 if you like a bit of heat)<br \/>\n250g of your choice of pasta, cooked to package instructions (I used organic penne)<br \/>\nMock Parmesan to taste<\/p>\n<p>&#8211; Preheat as saucepan over medium-low heat.<br \/>\n&#8211; Add the oil and garlic, and saut\u00e9e for about a minute, until fragrant, being careful not to let it burn.<br \/>\n&#8211; Add the remaining ingredients (except for tofu, pasta and mock parmesan), cover, and raise the heat a bit to bring to simmer.<br \/>\n&#8211; Simmer for about 15 minutes stirring occasionally.<br \/>\n&#8211; Then add the tofu and reduce the heat to low and let it cook for another 5 minutes just enough to allow the tomato sauce to soak into the tofu.<br \/>\n&#8211; Serve with your cooked pasta and sprinkle with mock parmesan<\/p>\n<hr \/>\n<p>&nbsp;<\/p>\n<blockquote><p><em><strong>Sauteed Tofu<\/strong><\/em><br \/>\n400g firm tofu<br \/>\n1 tablespoon of dehydrated vegetable stock (or powered equivalent)<br \/>\n2 tablespoons of soya sauce<br \/>\n1 tablespoon coconut oil<\/p>\n<p><em><strong>Method<\/strong><\/em><br \/>\n\u2013 Melt the coconut oil in a saucepan or wok over medium heat.<br \/>\n\u2013 Add the tofu and saut\u00e9e until starting to get crispy<br \/>\n\u2013 Add the dehydrated vegetable stock and stir fry for a few minutes until tofu is covered<br \/>\n\u2013 Add 2 tablespoons of soya sauce and stir fry for a couple of minutes until tofu is covered and starting to caramelise.
